As a DIP - Slice up your favourite dipping vegetable, carrot, celery and peppers; serve on a platter accompanied with a dipping dish of tapenade of your choice.

On CRACKERS - Spread tapenade onto crackers topped with some bocconcini cheese or any one of your desired toppings.

As STUFFING for vegetables - tapenade is wonderful as stuffing for mushrooms, zucchini or hollowed out baby marrow or peppers. You simply need to bake.

As an
ANTIPASTO - combine a little tapenade to the yokes of hard-boiled eggs, spoon the mixture back into the hollow eggs and garnish with a few capers.

On PIZZA - as an alternative to traditional tomato base, try using tapenade instead. Just spread over the base with some traditional tapenade with anchovie and top with you favourite toppings.

As a PESTO - stir tapenade with a drizzling of extra virgin olive oil into hot pasta and serve.

As a VINAIGRETTE - a tablespoon of tapenade stirred into vinaigrette makes a great tasting dressing for a fresh garden salad.

On warm crusty
BREAD - instead of the usual garlic - replace it with tapenade. Spread on top of the bread and toast in the oven.

As a STUFFING for meats - simply slit chicken breast, beef fillet or lamb (rack or leg), stuff with tapenade, rill, roast or Bar-b-que.

As a SPREAD - under crumbed meats - try lamb cutlets spread with tapenade, dipped in egg, tossed in breadcrumbs and fried in good olive oil.

As an ALTERNATIVE to Tartar sauce - combine 50% egg mayonnaise with 50% tapenade. Serve as an accompaniment to grilled fish or chicken.

EXTRA FLAVOUR in Thai fish cakes - simply fold through tapenade of choice with fish meat and cook as usual.

for mashed potato - Vegetarian tapenade adds flavour and goes well with all potato varieties.

On PUFF PASTERY as a finger food - spread puff pastry with tapenade lay anchovie fillits, pastry strips or char grilled vegetable strips on top and bake.
