Black Manzanillo/Mission - ripe fruit coloured to 50 to 60% to the pit.
Black Kalamata/Azappa and Nab Tamri - a deep black skin colouration is required.
Green fruit are to be green ripe to straw in colour – no dark shading.
Harvesting
Fruit must be hand harvested, avoiding physical damage to the fruit.
Sorting
All fruit must be sorted prior to delivery.
Only first grade fruit will be accepted.
Sort by variety.
Uniform size within batches.
Remove all fruit with bird and insect damage eg scale, fruit fly and vegetable bug.
Remove all fruit with biological damage eg Anthracnose, softnose, rotting.
Remove fruit with physical damage eg hail damage and bruising.
Pack green and black fruit separately & mark containers accordingly.
Storage
Store olives in a cool clean area in food grade containers filled with potable water. This prevents bruising and prevents the olives dehydrating.
Transport
Fruit is to be transported to the processing plant as soon as practicable - maximum 3 days from harvest unless prior arrangement made with Production Manager. All olives to be transported in food grade containers filled with potable water and sealed. Containers available from the factory.
Transport by this method reduces bruising and keeps the olives cool.
Label each container with supplier name, harvest date and variety.
Documentation
Fruit must meet MRLs and therefore grove spray diaries and application sheets are required before harvest. Additional applications necessary after supply commenced must meet the withholding periods applicable and an updated application or spray diary sheet must accompany these olives.

Receiving at the Factory
Olives will be accepted for delivery weekdays between 8.00am and 4.30 pm unless prior arrangements made.
A ramdom sample of olives will be checked for compliance to this specification, weighed and recorded on the Growers supply schedule. Fruit with a greater than 10% variation to the specification will be downgraded or rejected and the supplier notified.
Preferred suppliers will have completed an accredited supplier program. ie Olivecare, Freshcare or the SOPA accreditation program.
